Mikkelsen studied traditional French cooking with Simone Beck at her school L'Ecole des Trois Gourmandes, in the south of France. Before moving to Bellingham in 2001, she owned two restaurants, a catering business, a bed and breakfast, and hosted a cooking show in Minnesota.

Her husband of 30 years, Mike, a life-long artist, was diagnosed with Parkinson's in 1993...


She talked to The Bellingham Herald recently about her book, her husband and their journey.

Question: Why did you write "Take Charge of Parkinson's Disease"?

Answer: "Take Charge" evolved after my discovery of the health and brain benefits of a diet rich in nutrients and antioxidants and low in inflammatories. Imagine that. Eating our way to better brain health! For a "foodie," that message was both inspirational and challenging...



Q: What do you hope people gain from reading it?

A: We had a strong educational team to present the science in "Take Charge." Carolyn Stinson's PD research is not only thorough but entirely digestible, delicious science. (Nanette J. Davis') inspiring approach in her chapter, "When a Spouse Becomes a Caregiver," focuses on the positive, proactive possibilities of caregiving...

We also hope to motivate people to exercise and eat well with more beneficial herbs and spices, fruits and vegetables, under their belts.

Primarily, we hope to inspire readers to consider, and share, a new way of viewing PD - or any debilitating disease.

A: The brain-healthy pantry and recipes were created, by combining, almost exclusively, antioxidant/anti-inflammatory ingredients. Taste is essential for me and with Mike's diminishing ability to taste, it is even more critical that he anticipates and enjoys his food...



We are the CEOs of our lives, even with PD along for the ride. One thing we certainly can control is what we eat.

is this book available for purchase on-line?

back in the day, i had to drive 120 miles (one way) to a borders in syracuse, to buy michael j. fox's book "lucky man". i was a little headstrong back then, lol

I found the book on the author's web site with a feature allowing one to purchase it. I did order it with hopes I will discover some new antioxidant filled recipes.
