I guess now that I've regained such a significant portion of my health, having celiac isn't that big a deal to me. Of course, when I was diagnosed I thought it was the end of the world. It's actually been 2 1/2 years, not 1 1/2 years since I was diagnosed. I guess time just slipped away from me.

Cookies sound good. Baking was always one of my favorite hobbies and I'm glad I've learned to do it again. At the farmer's market I'm a vendor at, 4 booths down is a bakery that makes macarons which are naturally gluten free. I always indulge in one a week. It's heavenly. Today was salted caramel. I always close my eyes to better enjoy it, I probably look like some kind of freak. Which is really high on my list of couldn't care less.
