The pins and needles in legs and feet certainly sound like peripheral neuropathy and celiac has been implicated in that disease. There's a researcher from England (Sheffield, I believe) who says that had celiac disease first been associated with neurological issues instead of gut issues it would've been defined as a disease of the brain instead of a gastrointestinal problem. Google Marios Hadjivassiliou for more information - along with David Perlmutter who wrote the book Grain Brain. Says it all! Sorry that you bake for a living but really, going gluten free may well be the best thing you can do for your health. Also check out The Wahls Protocol for an amazing story that includes going gluten free - for MS. Seems to be a solution to many many problems . . .
Best of luck!
