Default gluten sensitivity

Celiac testing is not very reliable. My doctor said don't even bother, just go gluten free. I had many of the symptoms you have plus horrible neuropathic pain. I did not get rid of them until I got every last speck of gluten out of my house and life. You can find web sites that tell you how to do that.

After about year, my pain was just about gone. I did two challenge tests with tiny amounts of gluten. Both times, 2 days later, I had pain flare ups.

I DO NOT BAKE with gluten any more, not even for my kids. Flour gets airborne and stays there for hours and then settles everywhere. You are breathing it if you are baking. If you are breathing it, you are swallowing it. If my kids bring gluten into the house, they know they must keep it away from my food prep and eating areas.

This is an extremely hard thing to do. But, I was very motivated because my neuropathy was unbearable.
