So, your current level looks good. What you don't know is if your level will fall if you stop completely.
I'd go by your response of improvement, that you need the B12 daily. You may not need 5mg a day now, and may maintain, (coast) at that new number if you reduce to 1mg daily.
That is up to you to decide.
I don't think you can expect fixing B12 will change your flat feet.
Some low B12 is caused by genetic inheritance (pernicious anemia). And some is acquired, due to RX medications causing it, or lifestyle (veganism) causing it.
