--from gluten-induced peripheral neuropathy, particularly small fiber neuropathy (which affects the small, unmyelinated fibers that control temperature and pain sensation as well as a number of autonomic functions), is a well-known/described clinical entity.

Take a look at The Gluten File at the top of this forum and just look up peripheral neuropathy. The file contains innumerable papers and monographs on the entity. Moreover, it is often widespread in the body, not just confined to the longest nerves at the extremities.
