Default Convulsions at night

Been having a lot of issues this last year and not really sure what's going on. So let's start with the basics.

-When I lie down to go to sleep, I start getting increasingly shaky, like my legs want to vibrate or something.

-I'll get those knee jerk spasms like when you're waking up from almost being asleep, but I'm pretty much conscious for the whole thing.

-This is also sometimes accompanied by difficulty swallowing and trouble breathing, my chest around my lungs will often feel sore.

-It feels like their is liquid built up either in my lungs, or in my esophagus, like something is lodged there, and breathing won't be normal until I dislodge it.

-Last night, I had head pains with the convulsion thing, and it really felt neurological at the time, the soreness was on the left side of my forehead but not the rest of my face, it's still there now actually but might just be tiredness.

I've had a bunch of echo cardiograms and my heart seems healthy every time
Any time a doctor has listened to my breathing they find it normal, blood tests have been the same deal, I don't know if they're just generalizing or its just a really weird problem.

The one lead on this I had was when I went to see a particular chiropractor a few years ago, He was in his 70s and mentioned something really odd about my neck while he and his apprentice checked it out. Apparently with the state my neck was in, I can't turn my head as far in one direction as the other (And I do notice resistance when I do this but never thought about it much) He asked if I had sustained an injury or been in a car accident cause it was really bizarre. This particular clinic did laser therapy in addition to chiro, and as per the treatment plan he had me do some of that first. Unfortunately I ran myself out of money and wasn't able to go for more sessions and never had him deal with it.

As time went on I noticed I'd get some weird sensations sometimes when bending my neck different ways when lying down for bed some nights. Like getting really loopy when I lie back or having tingly sensations. Because I have so many different issues, Doctors never seem to have any answers or interests in pursuing it. The guy I spoke to yesterday literally said "Well it can't be organic because obviously you're still alive a year later" He sent me for blood tests to check for some of the same stuff I've been tested for previously. Not really sure what direction to go in at this point, Just hoping I don't have anything that'll cause me to drop dead sooner than later.
