This seems to be based on guesswork not evidence.

The way to do this properly for (say) American residents would be to do an epidemiology experiment.

Take a large sample of American residents and measure (not guess) what their dietary gluten levels are. Then see what effects they may have on their risk of Covid-19 infection and the consequences of that infection.

The results of that epidemiology experiment would be based on science rather than guesswork.
