Laugh Lower Fat Fudge Friday

it's pretty easy to make.

1/4 cup margerine or butter. use the smart choice brand for no trans fat and less fat.

2/3 cup fat free evaporated milk ( or the little 5oz can )

2 cups sugar ( mix 1/2 and 1/2 with splenda for lower calories and carbs)

2 cups chocolate chips

1 7oz jar marshmallow creme

1 cup of nuts, chopped. use your favorite. almonds are awesome and healthy.

1 teaspoon vanilla.

on low heat in a medium size saucepan, mix the milk, butter and sugar. stir until melted. raise heat to medium. keep stirring gently. bring to boil. boil for 5 minutes. remove from heat. stir in remaining ingredients. pour into a fol lined buttered 8 or 9 inch squeare pan. i use the foil for easy removal of the fudge. you just plop it out after it sets and cut into bite size pieces.

now for the fun part. this recipe is easy to play with. endless what you can do.

sprinkle the bottom of the pan with things like crunched up candy canes, white chocolate shavings, drizzle with a tablespoon of melted peanut butter or even just stir it with the last ingredients, mix in toffee bits, make a double batch and use mint chips for 1/2..layer when pouring in a 13 x 9 pan.

you can even make it with more chips and less sugar.

let it set by just sitting on the counter if your kitchen isn't too warm. cut, then store in a airtight container in the fridge.

now for the hard part...let it "rest" in the fridge for a few hours or best..overnight. i make atleast 10 batches every year.
