You need a mediator here. There is a very important note that must be made, allergies aside. Pacific and Atlantic salmon are like two different species of fish. Now, RW, I understand your loyalty to your local salmon, but do try to appreciate that it is the superior product and the other is a serious letdown once one has been privileged to sample the other.
I've even sampled the P salmon as fresh as it gets way up yonder in Alaska, and it was just as fishy and mealy as the stuff from the lower 48. But, your salmon over there is divine!
