sometimes it's what they use to serve with. like tongs for getting the salad...and them using the same ones to load a bread basket....

my niece is a chef. where she works now they are super strict. other places she has worked, before becoming a chef ( she was kitchen staff...sue chef) she said she would see the chef use the same spoon or knife on multiple dishes.
