When I was doing SCD this summer, I traded some e-mails with someone who made her own coconut milk yogurt. Now that I can eat canned coconut milk again, I may try it. Making your own SCD coconut milk is tasty, but time consuming. I think it only takes 8 hours to make your own coconut milk yogurt. The trick is to separate the water out ahead of time or the yogurt ends up separating itself. This might motivate me to try it!
