Default bowel issues (I warned ya!)

I was diagnosed as gluten sensitive and have been gluten free for over a year now. Some days the only grains I get are what is in my rice chex breakfast. If after several days, or a week of that, I suddenly eat more GF baked goods I wind up with loose bowels. Hopefully I explained that okay. I'll go for days or a week eating a very small amount of grains then eat twice or more grains in one day or over several days and have loose bowels. The predominate grain on any given day is rice. How do I correct this bowel problem. (Things aren't nearly as bad as they were before diagnosis but still.) Do I need a bigger variety of grains? Do I just need a more even amount of grain from day to day?
