Zucchini pancakes (aka patties) are one of my favorite ways to use zucchini! I usually make them with a little onion, salt, pepper, a
hint of ground nutmeg and some parmesan cheese. You can even combine with shredded potato to mix it up a bit. It's so easy to improvise from a basic recipe. (Just make sure you let the veggies sit and squeeze the moisture out so they crisp up.) Have delicious fun!
