Potato Chip Chicken
Boneless, skinless chicken breasts or tenders
Bag of "normal" chips (think plain old Wise or Utz - not low fat, ridges, etc)
Seasoned salt or Paprika
melted butter/margarine
Rinse chicken and shake off (or drop a few times in sink due to numbness)
Drag chicken thru melted butter (IE: chase around until you grab the little sucker). Drip off excess butter.
Sit on chips to crush (works really well under seat cushion of my wheelchair)
Coat buttery chicken in crushed chips (Tremors help with the shaking/coating)
Put chicken on tinfoiled cookie sheet. Sprinkle with seasoned salt or paprika (gives cheery color and a bit of flavor).
*or use garlic salt or lemon pepper combo
Cook 400 degrees for 15-20 minutes
Yummy and kids love it. Clean up is a snap- throw out chip bag, toss butter bowl in dishwasher (if you didn't break it) and throw tinfoil in garbage.
