We always have cabbage rolls with Thanksgiving and Xmas, and I usually make enough to freeze for both occasions. It's a lot of work though, so unless someone is prepared to spend most of a day making them, probably not much point writing out the recipe. They do freeze up nicely though.

Your pecan log sounds yum, Kelly. That is so easy, I think I might have to try it.

I make a fairly easy, make-ahead brocolli, carrot and cauliflower BAKED in cheese sauce dish (easier to make then say ), but I'll have to try to dig up the recipe so I don't forget anything ...
