Broccoli Casserole Which is super easy.
2 pkgs Chopped Broccoli cooked and drained
2 eggs
2 Cups of Cheddar Cheese (divided = 1/2 cup for topping)
Italian Bread Crumbs
2-3 strips of bacon Crispy and crumbled.
1 Cup of Mayo. (I am from Virginia we use Duke's! The rest jus don't taste right)
Preheat oven to 350
mix Broccoli, Eggs, Mayo, 1 1/2C cheese in a bowl, Place in Casserole dish.
In another bowl mix remaining cheese, bacon and about 1/4 C bread crumbs. Sprinkle this mixture over casserole. I also sprinkle a little parmesean cheese on top. Bake 30-40 minutes until golden.
You have to let this sit for at least 30 minutes before serving or it will not set properly. But it is yummy!
I also make rum balls for the adults, and if anyone happens to snag some deer meat, I LOVE making jerky for christmas.
