I'm gluten free but never personally suffered from headaches/ migraines.

Here is some info about headaches and gluten sensitivity/ celiac disease.

Other food sensitivities may be a factor, too. While wheat tops the list, it might be worth having some food allergy testing done, both traditional testing (IgE) and also IgG "delayed" food allergy testing. Some labs that do IgG food allergy testing are listed here, right column:

Here is a study mentioning top food offenders.
Quote:
The commonest foods causing reactions were wheat (78%), orange (65%), eggs (45%), tea and coffee (40% each), chocolate and milk (37%) each), beef (35%), and corn, cane sugar, and yeast (33% each). When an average of ten common foods were avoided there was a dramatic fall in the number of headaches per month, 85% of patients becoming headache-free.

And... from what I remember, magnesium deficiency can be a factor in migraines, and there are some other potential nutritional factors. You can check out these sites... maybe you'll find something worth trying. Nutritional deficiencise or imbalances often go hand in hand with gluten sensitivity/ celiac disease.
