Happy St. Paddy's Day
Hi,
I enjoy following the calendar when I am up to it.
My mother used to make "Bubble and Squeak" for us on St. Patrick's Day. She made the poor man's version -- no meat.
Anyone have any memories?
Or any fun planned?

--cabbage
--potatoes
--butter and/or oil
Cut up cabbage into bite size chunks, boil till soft. Cool.
Boil Potatoes, cool, skin and mash.
Mix cabbage and potatoes together in a mixing bowl.
Heat butter or oil in a frying pan; when hot, add cabbage and potato mixture. Fry until a nice golden brown.
Ready to eat!
Serve with a little extra butter at the table.
Variation: Fry bacon and crumble; then proceed as above.
