One reason they had so many children was because they needed them to help out on the farm. And also, many children did die from one thing or the other including birth. They didn't have the medical care we have today. And they weren't all born at the same time.
And as mentioned, the only birth control was breast feeding and "natural" method as After My Nap posted. And quite a number of women did die from childbirth. You don't have to go back to Colonial times either. It happened in my great grandparents day and also my grandparents day and my parents day. Just my thoughts.
