My wish list for blood work for my son with very low cholesterol (who is not on a gluten free diet) includes Vitamins A, D, K, and E. These are listed on page 37 of Peter Green's book on Celiac Disease as being the fat soluble vitamins that are commonly malabsorbed in celiac disease. I would also request a liver function panel because cholesterol is manufactured by the liver. I would think it would also be important to check digestive enzymes to see if they are present in normal ranges.

This is just a start but I first have to find a doctor that will agree that the low cholesterol might not be a good thing.
