eat them - like in salad, pasta sauce etc. If you have leftovers just put them in fridge to help them last a bit. I only take out about 1/2 jar at a time. I also find they add a more concentrated tomatoe taste to spaghetti sauce - yum
BTW, I think cut up (but not rehydrated nor in oil) sundried toms are great in salads, pasta or sprinkled on a baked potato!
