I also get stumped on things to bring to eat on the fly....as in flying out the door so I'm not late for work! I have a few things I keep handy, and they actually are working pretty good:
Yogurt and then have a ziplock of granola to sprinkle in it and it makes it pretty harty...
LUNA "Nutz Over Chocolate -Whole Nutrician Bar for Women" which are high in protein (9g) and Fiber (3g) when I'm not in the mood for a 'breakfast' type food, this seems to do the trick! These are 'filling' too, which is a big plus. I will also buy "Cliff" bars and these a really filling, however I've been told that they are an aquired taste...
I have also brought in some frozen, personal sized Quiches - these are really good too.
Since you have a toaster, you could bring frozen waffles with you. I keep a small jar of peanut butter in my cabinet, and I will put that on the waffles, and I can also bring in crackers to spread on for a snack, or celery sticks etc.
I don't have all of this stocked...but I interchange just to get some variety.
Ok, it's 2:03 am Christmas morning....and I am thinking about breakfast!
