It has a LOT of butter, Alffe, but then scampi sorta has to. LOL
Shrimp Scampi
1 lb pasta ( I used fettucini)
3/4 cup butter ( 1 1/2 sticks)
1 lb peeled and cleaned shrimp
4 cloves garlic ( minced)
2 tablespoons fresh lemon juice
3 tablespoons chopped parsley
1/4 cup white wine
salt and pepper to taste
Preheat oven to 400. Put butter in 9X13 glass baking dish and place in oven until butter melts
Add pasta to boiling, salted water
after butter melts add wine.
stir in shrimp, garlic and lemon juice to the melted butter and return dish to oven for three minutes. Remove from oven, stir, add parsley and return to oven for an additional 2 to 3 minutes, or until shrimp is opaque. Season with salt and pepper.
Spoon the shrimp and butter sauce over pasta and and toss to coat
I didn't care for the fettucini. It seemed too "dense" for the shrimp. Will try linguini next time...or even rice.
