Infants can be born with all sorts of issues. But, I don't think gluten is in formula? However...there is corn in formula. In fact, the only corn free formula is Alimentum Ready to Feed (the powdered one has corn) Some babies are allergic to corn. In fact, I've run across a few moms who were either trying to order Mare's milk from England or had to build their own elemental formula to avoid both corn and milk. (very scary stuff)

When he turns blue is he all blue? I remember my first dd turning half blue and calling the dr all freaked out...and he said just to turn her over. She immediately pinked up :P He said not to leave her lying on her side for too long, but I can't remember the whole explanation.

I know that baby wearing helps a lot of babies with apnea issues. Infants learn breathing from their parents modelling it, and will pace their breathing similarly to an adults if cosleeping (which I don't advise if dil is smoking or drinking or even taking cold meds) Breathing expired air somehow triggers them to inhale, as well. (I beleive this info came from Anthropologist Meredith Small, I seem to recall reading it in Our Babies Ourselves)
