Well, I sure don't have kelp noodles available locally, but I've got some dried kelp I bought at a chinese store in Memphis. I may try soaking the kelp, blending it to a slurry, and add it to an rice noodles recipe in place of some of the liquid to make my own noodles. The noodles wouldn't be only kelp, but I bet they would have a good taste. If my experiment turns out, I'll post the recipe.
