One way to make beans and grain easier to digest is to soak them overnight in water and about 1 tablespoon of lemon juice. This, of course, is assuming you are starting with dried beans and grains.
Pink lentils are my favorite. A good way to prepare them is to boil them with grated ginger and tumeric. You want enough water so when they are cooked, you get more of puree. Add some lemon juice at the end. You can then make a fragrant, spicy oil to put on it. I've sauteed garlic and cumin seed in ghee or olive oil very briefly and add to the cooked lentils. Oh...I don't pre-soak the pink lentils.
