Default Another twist on Gingerbread

Hi Again! Well, it is amazing what one can find scribbled on the back of a napkin at the back of a recipe book---another family recipe! (Trying to get ORGANIZED)...

GINGERBREAD APPLE COBBLER

4 large apples, peeled, cored and sliced*
1 tablespoon fresh lemon juice
1/2 cup sugar

Gingerbread Topping:
1 egg
1/2 cup buttermilk
1/4 cup molasses
1/4 cup sugar
1 cup flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
1 1/2 tablespoons butter at room temperature

Instructions:
Preheat oven to 350 degrees; place sliced apples mixed with lemon juice and sugar in greased 8" baking pan; bake for 20 minutes.

Meanwhile:
Beat eggs until foamy. Add buttermilk, molasses and sugar--beat until well blended.

Sift together flour, salt soda, baking powder and spices. Add the butter and the dry ingredients to the liquid ingredients; beat until well blended.
Pour over the apples and bake for an additional 30 minutes.

Serve warm, garnished with dollops of whipped cream if desired. (Vanilla ice-cream isn't too bad, either!!)

(*Other fruits, such as peaches or pears can be used instead of apples)

This is VERY yummy!!! Enjoy!!
