The smoke point on Ghee is higher...so there are less fumes.
You can therefore cook at higher temps for less time. Coconut oil would be comparable to the Ghee (butter).

Smoke points for certain oils all vary.

Breathing in the fumes from oxidizing oils, is not good people.
Low smoke point oils, fume faster, and break down quickly.
