Usually, the bite adjustment to the "other teeth" is minimal. If she used a high speed suction directly over the area that she was drilling, then your exposure was also minimal. It would have been impractical to put a rubber dam on this tooth when adjusting the bite. So the high speed suction when used properly is very effective in reducing your exposure from the gold dust as she adjusted that crown. Rinsing with copious amounts of water is also helpful in removing the fine gold particles.
You are wise to be cautious about your dental care. In general, a biological dentist is more knowledegable than a conventional dentist about the whole body connection.
