Default Help with possible gluten sensitivity

I am new here. I need help. I have had irritable bowel syndrome for 25 years or so, manifested by diarrhea w anxiety or butterflies in stomach feeling occurring very frequently lasting for about 3 days at a time, but decreased episodes with gluten restriction diet. I had the duodenal biopsy screening, it was neg. Colonoscopy was neg, doc said I was sensitive to the thing they use and had discomfort. Blood work was neg for celiac panel testing. Enterolab results were confusing, I don't really know why they didn't' test the alpha HLA DQ A1 alleles since you have to have both to confer an increased risk for Celicac. Here are the results:
My basic question is this, it is so hard for me to do the gluten free diet. I try to but is every where. I don't know if my break through episodes are happening because I am cheating or not. I have had episodes after eating corn dogs and tamales while I was on a GFD, and eating too much cheese makes me C.
Does any one have any words of wisdom/encouragement for me?
Here are the results: A) Gluten Sensitivity Stool and Gene Panel Complete *Best test/best value
Fecal Anti-gliadin IgA 24 Units (Normal Range is less than 10 Units)

Fecal Anti-tissue Transglutaminase IgA 8 Units (Normal Range is less than 10 Units)

Quantitative Microscopic Fecal Fat Score 356 Units (Normal Range is less than 300 Units)

Fecal Anti-casein (cow’s milk) IgA 30 Units (Normal Range is less than 10 Units)

HLA-DQB1 Molecular analysis, Allele 1 0201

HLA-DQB1 Molecular analysis, Allele 2 0602

Serologic equivalent: HLA-DQ 2,1 (Subtype 2,6)
So what is my HLA??? ;is it HLA DQ 2.5?? and DQ 1??? Why didn't they test for the alpha since it is supposedly necessary to have the gene for Celiac???
does b1 0201 always link to alpha 05??
Thanks in advance. I have read a lot on this site and have learned much, but am still confused.
