I lived in Mo. in the county for 27 years. Same thing happened, someone ahead of us hit the deer, and my friend took the deer in to butcher it. Google venison. I was kind of squeemish about the whole thing. Deer meat however can be fixed quite well. I don't remember the receipes I used, but I bet you can find some good ones on line.
