Dear Majo,

honey is almost all sugars... but has traces of other nutrients that make it a healthy food in general. raw unfiltered honey is supposed to be the best - if you can't get unfiltered, at least raw is better.

it is mostly fructose and glucose singly. use it in moderation. combine it with other foods.

caloriewise i seem to remember it is a little denser than sucrose...

from www.honey.com, here is an article with everything you ever wanted to know about honey :

it goes great with peanut butter btw. if you can get say a sprouted multigrain bread (low on starch), chunky peanut butter mmmm... with a little honey..... that's yummy.
