I used to use fresh, finely chopped onions but i don't mind if the onions don't cook fully, which is not the case for everyone.
More often than not, I used to cook sort of a cousin to what we usually call hamburger. You could not cook it on a grill. I imagine it has a name but I don't know it. It's... well a richer form of hamburger that includes egg and other flavorings. I cooked the patties in a pan with a laurel leaf under each. I first seared both sides, then lowered the heat and covered. I added a drop of cooking wine or extra dry martini near the end. Took 20-30 mins depending on patty size. In this case, the onions would get cooked. I made a stuffed version too, with (precooked) spinach and carrot slices inside the patties.
OH... i also need to make an
amendment re: the zucchini ... mom said she GRATED them ... makes sense as the tidbits in there were very fine indeed. This shortens their cooking time.
