Sultana Orange Cake

750g sultanas (10 1/2 oz )
1 ¾ cups boiling water
½ cup orange juice
3 eggs
1 tablespoon grated orange rind
1 cup brown sugar, firmly packed
½ cup oil
1 ¾ cups wholemeal self-raising flour
1 cup soy flour

Grease a deep 19cm (7 1/2 inch) square cake pan. Line with paper. Grease the paper

Combine sultanas, water and orange juice in a bowl. Stand for 1 hour
Beat eggs, rind and sugar in a separate bowl with electric mixer until thick and creamy.
Gradually add the oil.
Transfer mix to large bowl and fold in the sifted flours and the sultana mixture
Spread into prepared pan
Bake in moderately slow oven for about 1 ¾ hours
(Moderately Slow here for electric is 160-180C (325-350F)
Gas 160C ((325F)
Stand 10 mins before turning onto wire rack to cool.
