Default vegan GF diet....ug!

This is really hard for me because I'm a huge wheat lover...big time grain girl!
I've made my own wheat steaks to die for tasty!
Better than any prime rib! But thats my taste buds talking!
I've been mostly GF for a month now...no D-reah!...but still have loads of gut pain and gassss!
Like cival war going on inside....I hear the muskets firing and smell the gun powder! ....I think once my body adjust to this GF diet, this will quiet down a bit...hope so...I nearly killed my DH other night...he woke up gasping! Its that bad.
Gosh....why couldn't this sensitivity be to something distasteful like turnips or lima beans....why Wheat, Oats, Barley?!??
Anyone can live without turnips...but try a vegan diet without wheat, oats, barley?!! Sigh......... Rice gets a little old day after day!
My blood test shows a high wheat allergy and corn also shows about half as much allergic reaction.
I keep finding myself "cheating" with a bite here and there....how stupid is this as its only hurting....ME!
Anyone else struggle with same issues?
Any good recipe's for a savory "roast"?...something that is a little more on the meat loaf look/taste?
Ive been grinding up pecans, tofu, TVP, gf oats, cashew cream with onions, celery and sweet peppers....top it with sweetend tomato sauce, then bake it.
But don't really find this the taste I'm wanting.

Do any of you find the GF oats a little on the bitter side?
How do they remove gluten from oats...are they grown that way?
Or is there little gnomes that strips off the glue-ton from the oats?
Gosh forbid they use chemicals to remove it!
