Crytears, we are also gf and vegan, or I should say strict vegetarian, as we do consume some honey. This is a loaf recipe that we really like, especially after it has been refrigerated. Then we slice it and fry it. For the first night when its fresh out of the oven, I serve it with cashew gravy and various sides of vegetables. Let me know if you want my recipe for the gravy.

Lentil Loaf

We like this even better the second day, when we slice it and fry it. I like mine with ketchup; dh likes his fried with Bragg’s, onions, and pumpkin/sunflower seeds!

Ingredients:
 1 1/2 cups lentils
 1 cup brown rice
 ½ cup wild rice
 6 cups water
 1 small onion
 1 clove garlic
 2 stalks celery
 2 teaspoons sage
 1/2 cup chopped walnuts (I chop mine in food processor)
 1 tablespoon apple cider vinegar
 3 tablespoons ground flax seeds mixed with 5 tablespoons warm water
 fresh ground black pepper and sea salt

Directions:
Preheat oven to 350 F.

Wash lentils and rice, then cook together in 6 cups of water for 45 minutes.

Finely chop onion, garlic and celery. Saute until the onion is translucent. Add the sage.

Combine all ingredients in a large bowl (or stockpot) and mix well. Lightly oil a casserole dish and fill it with the mixture. Press down. Bake 40 minutes covered, 10 minutes uncovered. Let stand for 5-10 minutes before cutting and serving.
