Default Vanilla Extract enough to recreate symptoms?

Good afternoon. It has been some time since I posted, but having some serious issues and wondering if anyone can relate. I quit alcohol in 2015 due to neuropathy. I got much better - followed the supplement suggestions of other posters on here, gained weight and thought this was all behind me. The past year, I experimented with wine here and there and it did not seem to affect me in the same way, but I did have some effects. But then it all came crashing down this past August and not I keep trying little bits here and there just to become sicker and sicker. Now I have gastroparesis and am trying to manage it.

The past 3 weeks have been exceedingly rough after 4 days in a row of a glass of wine per day. I am brain fogged, have headaches, paraesthesia, tinnitus, nausea, chills, constipation, cold extremities, lethargy and muscle weakness. Had my electrolytes checked and the only thing off is a slightly elevated potassium level so that is not it. I made a small batch of 7 homemade protein bars with 2 tsp vanilla extract and only cooked them for about 25 minutes at 350. The fact that I am getting worse each day makes me believe that perhaps even the tiny bit of alcohol in the extract is what is causing the issue now? Can that even be possible?

I am going with a "no" on this one. BUT, I am not a Doctor and may be way off. That amount of alcohol would be absorbed by the blood and gone in very little time.

The alcohol in Vanilla should cook off during baking..
Might be some other preservatives or odd ingredients that caused the problems.
Is there alcohol left after I bake with vanilla extract? | Lagrima, LLC

Thank you. I read that too but grasping at straws at this point since I cannot figure out what is going on to cause such a relapse with the neuropathy. It seems hard to believe that 4 glasses of wine over a course of 4 days could make everything come back and last so long.
