Wow Mari! Congrats on the weight loss! I've put on about 20 pounds in the last couple years. Fast food became my friend while I was finishing up school; and I don't think my new meds help. Time to give the weightgain some attention /sigh.
As for zucchini and sweet potatoes, here are some ideas I do for both to use as time savers. Sweet potatoes I will just boil and then put in the fridge. They keep for about 10 days, and you just have to heat them up in the microwave for a quick meal. As for zucchini I will make this on Sundays and just take it in my lunch all week long since its healthy and easy. Maybe your hubby would make a bowl and keep it in the fridge to munch on during the week. (You can add or take out any veggies that you like/dislike too!) Vegetables Ingredients: 2 medium zucchini 1 large red bell pepper 1 large yellow bell pepper 1 large sweet onion 1 small eggplant 1 package sliced mushrooms Dice veggies into chunks. Spray frying pan with Pam (or melted butter if you prefer) and fry veggies for about 5 minutes; enough so they still have the crunch left in them. Then let cool. (This part isn't necessary but i love it this way) Dice up an avacado after the veggies have cooled and add it to the bowl. Take any brand low cal vinigrette dressing and add to your taste to the bowl. Salt and pepper. Throw in the fridge to chill and serve up for a fast meal later. Our weekend fun was taking the kids to see that new Star Wars cartoon thats in theaters. The kids loved it. I guess they are making it into a weekly cartoon on TV. I wasn't overly excited over it; but I guess I've seen worse. Hope everyone is having a good weekend! |

missed the full moon
Hubby made a deal to take me to the beach once a month and I feel like it has been a while. (Well maybe it has only been two or three weeks but still.)
We were supposed to go tonight to see the full moon but he took a nap instead. Then he woke up around midnight when it was too late. (I had the good sense to take my nap earlier in the day so as not to interfere with our night at the beach.) We are going tomorrow night I hope. I get energy from the beach. Mari |
