Bizi"s Spinach mashed potatoes
2+1/2 pounds of red small potatoes, unpeeled, cubed, boiled and drained 16 oz of frozen chopped spinach, microwaved 3-4 minutes, drained 8 oz of creamed cheese softened 8 oz sour cream 4oz (1 stick) of very soft salted butter 1 teaspoon salt or more to taste 2 teaspoons dried dill weed or more to taste 1/4 teaspoon pepper 2 tablespoons of minced garlic, (I use the kind from a jar, it is alot! and optional of course) In a large container, I used a gumbo pot, Except for the potatoes, Beat all ingrediants until smooth. Then add potatoes and beat quickly again just until still lumpy. Spoon into a large, greased, casserole dish. Bake 375 uncoved for 20 minutes. This is a pretty dish, green and red and white for the holidays! bizi |

This year we did something a little different. My mom prepared the turkey, and my sister in laws did the traditional side dishes. Earlier last week I had each of the kids (my neices and nephews included) pick a different country from around the world. Then we looked up traditional recipes from that country, and let them select which one sounded best and they came over yesterday/today to help prepare them. It was a lot of fun! The menu included: Holland - Cauliflower in cheese sauce Norway - Red fruit pudding Greece - Moussaka Middle East - Hummus India - Cucumber Raita Africa - Injera (its a type of flatbread we ate with the cucumber raita) England - scones Switzerland - Raclette China - sweet and sour spare ribs I also made a couple different salada and pies. It turned out pretty good! (kids had a lot of fun) I just went and rented my 4 a few movies to watch while James and I hang out upstairs since he leaves in the morning. (well, after his football game anyway lol) All in all it was a great dinner. :) How was your day relaxing? |
