Default Going Vegan

I've been vegan for a few months and don't miss the meat. It was gradual, first meat and chicken, then eggs, then cheese etc.... I'm starting to get creative with recipes. Anyone have any really interesting recipes to share?

Ya, I open a box of Black Bean burgers, do stir fry with broccoli slaw mix, chopped up burgers, tofu (can pre fry it), use ginger (grated), orange juice & a lil olive oil. You can use other veggie burgers or just use the tofu. Probably should put in the pan in reverse order though. Brain fart, sorry~

I don't think I could ever live without meat. I know it sounds stupid but for me it's just like smoking :lol:

Have you ever had a Falafel? It's really yummy! Also, hummus... hmmm <3


Baked Falafel
Makes about 21 balls

1 15 ounce can garbanzo beans
1 small onion, finely chopped
2-3 garlic cloves, finely chopped
3 tablespoons fresh parsley, chopped
1 tablespoon fresh cilantro, chopped
1 teaspoon lemon juice
1 teaspoon olive oil
1 teaspoon coriander
1 teaspoon cumin
1/2 teaspoon dried red pepper flakes
2 tablespoons flour
1 teaspoon baking powder
Salt and pepper to taste

Preheat oven to 375 degrees. Drain and rinse the garbanzo beans. Put in a medium sized bowl and smash with a fork. Add the rest of the ingredients and mix well. Form into small balls, about 1 1/2″ in diameter and slightly flatten. Place onto an oiled baking pan.

Bake for 15 minutes on each side, until nicely browned (since it’s baked, only the part actually touching the pan will be browned and crispy).

Serve with mini pita pockets, hummus, tahini sauce, tomatoes, lettuce and/or cucumber.

Also, this one is one that I haven't tried yet but I am most certainly going to give it a try sometime soon



Mediterranean greens vegan burgers
Makes about 12 to 15 small/mini burgers.

-About 2 cups of blanched and tightly squeezed out dark green leafy vegetables - about 6-7 cups of washed greens. Use at least half strong flavored greens such as arugula (rucola/rocket), cress, shungiku, mustard greens, etc. The rest can be mild flavored greens like chard, spinach, etc.
-450g / 1 lb firm tofu, drained
-120g / 4 oz. fresh mushrooms (you can use one type of mushroom, or a mix, whatever you have), finely chopped
-1 small onion, finely chopped
-2 garlic cloves, finely chopped
-3 Tbs. dry breadcrumbs
-1 Tbs. finely chopped rosemary leaves
-1 tsp. dried oregano
-1 tsp. salt
-several grinds of black pepper
-olive oil
