Default Well, here's a laugh for one and all...

I've been typing away merrily after looking for some of my recipes and then I realized that I would probably need to convert all the ingredients and temperatures etc.. I'm not sure exactly how one would measure 6.5257oz. Sure wish the US would go Metric. LOL

Another thing is that some of the words I use might need translating. Just ask if you don't know what I mean by some words.

I was thinking about you asking for "simple". That can be tricky with fruit cakes. I figure what I really find the easiest are the boiled fruit cakes. So I'll post a few of my favourites. I used to make really great ones, as are used in wedding cakes and xmas cakes but I've found that they're just way too expensive these days so tend to do much lighter ones.

Lots of fruit cakes use alcohol in their recipes. I tend to just use orange juice. Depends. If it's for something really special I'll buy a miniature bottle like I do for the rum balls I make for xmas.

These first three ones I'm posting today are from my Australian Women's Weekly collection of cook books.
I have a brilliant boiled fruit cake recipe somewhere from the Country Women's Assocation but I'll have to hunt that down. It's about 35 years old, unlike myself. lol

Boiled Date Cake

185g butter (6.5257oz)
1 cup milk
½ cup brown sugar
1 cup finely chopped dates (No seeds!)
½ teaspoon bicarbonate of soda
2 eggs
2 ¼ cups self-raising flour

Combine butter, milk, sugar and chopped dates in a saucepan and stir over heat until butter is melted. Bring to the boil. Remove from heat, stir in soda. Stand 5 minutes.
Stir in lightly beaten eggs and sifted flour in 2 lots. Mix well

Pour mix into well-greased 20cm (8 inches close enough ) ring tin.
Bake in moderate oven 40 minutes.
(Moderate oven here is 190-200C (375-400F)
Turn onto wire rack to cool.
Serve buttered.

more to come once I figure this conversion business out. Actually laughing out loud here.

Sultana Orange Cake

750g sultanas (10 1/2 oz )
1 ¾ cups boiling water
½ cup orange juice
3 eggs
1 tablespoon grated orange rind
1 cup brown sugar, firmly packed
½ cup oil
1 ¾ cups wholemeal self-raising flour
1 cup soy flour

Grease a deep 19cm (7 1/2 inch) square cake pan. Line with paper. Grease the paper

Combine sultanas, water and orange juice in a bowl. Stand for 1 hour
Beat eggs, rind and sugar in a separate bowl with electric mixer until thick and creamy.
Gradually add the oil.
Transfer mix to large bowl and fold in the sifted flours and the sultana mixture
Spread into prepared pan
Bake in moderately slow oven for about 1 ¾ hours
(Moderately Slow here for electric is 160-180C (325-350F)
Gas 160C ((325F)
Stand 10 mins before turning onto wire rack to cool.

Melt and Mix Fruit Cake

1 ½ kg mixed fruit (3lb 5oz)
½ cup of sherry, rum, whisky or brandy
1 Granny Smith apple (green cooking apple)
1 tablespoon honey or golden syrup
1 cup brown sugar firmly packed
250g butter (8 and 3/4 oz )
4 eggs
1 ½ cups plain flour
½ cup self raising flour
1 teaspoon mixed spice

Place chopped mixed fruit in large basin.
Add alcohol or orange juice, peeled and grated apple, honey or syrup, sugar and eggs.
Mix well with wooden spoon to break up any large clumps of fruit.
Add cooled, melted butter, sifted flours and spice
Mix thoroughly.
Place in a deep 23cm (9 inch) round or deep 20cm (8inch) square cake tin lined with three sheets of greaseproof paper or baking paper.
Bring the paper 5cm (2 inch) above the edge of the tins

Bake in slow oven 3 ½ hours until cooked when tested.
Slow oven here is 150C (300F)

Summer fruit cake with orange icing

1 1/4 cups cranberries
1 1/4 cups dried peaches
2/3 cup (5 fluid oz) orange liqueur (I use orange juice)
250 g (8 3/4 oz) butter unsalted and softened
1 cup caster (superfine) sugar
1 teaspoon vanilla extract
4 eggs
2 cups (11 1/2 oz) plain (all-purpose) flour sifted
2 1/2 teaspoons baking powder
1 cup (8 fluid oz) milk

Icing: 3/4 cup (4 1/2 oz) icing (confectioner's) sugar
2 teaspoons hot water
1 tablespoon orange liqueur (I use orange juice)

Place cranberries, peaches and liqueur (or juice) in saucepan over low heat and cook for 5 minutes or until the liqueur has evaporated and the fruit is soft.
Allow to cool completely.

Preheat oven to 160C (320F).

Place the butter, sugar and vanilla in an electric mixer and beat for 8-10 minutes or until light and creamy.

Add the eggs, one at a time, beating well after each addition.
Sift over the flour and baking powder and beat until well combined.
Fold through the milk and the cranberry mixture.
Spoon the mixture into a lightly greased 26cm (10 1/4 inch) fluted bundt tin and bake for 45-50 minutes or until cooked. Test with a skewer.
Turn out and cool on wire rack.

Combine icing ingredients. Spoon over the cake to serve.

{note from me... this is quite a large cake}
