Yes Melodyl...they come in very small glass jars and are chopped. If memory serves me....they are in the olive, pickle aisle..usually up on the top shelf. I use them in a recipe called Texas Caviar.

Okay, so what I'm looking for is a jar called PIMENTOS, that are cut up??. Any particular brand?

And thanks VERY much. I love these and if I can buy them, I absolutely will. They give lots of color to a salad.

I couldn't be more spacific because I didn't have a jar in my pantry Melodyl....finally venturing out today (snow!) and will get a jar and give you details.

I use fresh red bell peppers in salads (slivered thin or chopped). Fresh has Vit C in it.
You can also bake red bells to soften the flesh, but I'd expect some nutrient loss that way. Roasted red bell peppers are very nice too. When you get the pimento in olives it has been pickled.
I am not sure all jar pimentos are pickled. So read the labels carefully.
