Note Almond meal, coconut cookies - flour free.

But not chocolate free. . Sorry to my sugar avoiding friends here.
I'm still testing recipes and eating them.

These taste like the old style almond/coconut macaroons. Not like the newer macarons that usually are coloured.
  • 1 and 1/4 cups almond meal (ground almonds) not almond flour
  • 1/2 cup dessicated coconut. Bought product seems to have added sugar and other things for some unknown reason.
  • 1/2 teaspoon baking powder
  • 1 beaten egg or 1 flax egg like I use. That's 1 tablespoon ground flax seed to 2 or 3 tablespoons water. Stir and let it sit until it's gluggy. Only takes few mins.
  • 3 tablespoons melted unsalted butter or whatever it is you use.
  • 1/3 cup of raw sugar or brown sugar whatever. I usually only use 1/4 cup due to sweet coconut and added choc bits.
  • Recipe calls for vanilla extract but I leave it out.
  • Chocolate bits for baking. 1/4 to 1/2 cup. I buy a vegan dark almond block that's on sale for $2 and break it up with a knife. Works well.
Add melted butter and sugar and mix around till it's not too grainy. Sit to cool.

Add to the dry mix and then add the flax egg or beaten egg.

Add choc bits after it's cooled a little and into round flat cookie shapes and into oven. 190C for me and about 375F for you all and cook for about 7 to 10 mins.
I keep an eye on them because I like them pale and not too browned. Plus mine don't have egg in them.

{I'm not vegan eater but do eat vegetarian so tend to have picked up on some products and ideas now they're coming out more. I found these online ages ago but didn't save the site. Thanks to them for making this yummy recipe.}
