i was thinking about this thread while i was making banana bread this morning.

what a wonderful christmas/holiday gift. mini zucchini mufffins. a touch a spring/summer in the middle of winter.

got my taste buds going...lemon poppyseed zucchini muffins. ...might not wait until christmas.

Zucchini pancakes (aka patties) are one of my favorite ways to use zucchini! I usually make them with a little onion, salt, pepper, a hint of ground nutmeg and some parmesan cheese. You can even combine with shredded potato to mix it up a bit. It's so easy to improvise from a basic recipe. (Just make sure you let the veggies sit and squeeze the moisture out so they crisp up.) Have delicious fun!
