Our Multiple Sclerosis Chapter is putting together a cookbook for people who have MS or any type of disability who have difficulty using cooking utensils/cookware. We have not found one currently on the market.
We are putting on a cooking demonstration this fall and want to incorporate ideas using adaptive equipment. If you have modified something or found something that you use, or modified a recipe to make it easier to fix, that is what we are looking for! If you have ideas, please share them. We have a local Chef who has volunteered his time for our Cooking Seminar. It has been a huge success in the past and this year our focus is modifying recipes to accommodate our needs. Thanks everyone for your input. It is very much appreciated. I will let you know how it all turns out!

I only have use of one hand - use scissors for everything, opening packaging, cutting, etc. Kitchen not HC, I'm in a chair, can't really stand, store utensils I use in a lower cabinet. Rest of family uses uppers. Use microwave for prepared or frozen lunches. I have a phone and know how to use it - delivery works sometimes but too $$$.
Mini chopper for veggies (onions, peppers). Bowls with o-rinfg for holding. have car dashbord mats that help hold things in place for stirring, etc., timers, U-Screw bottle opener mounted under Island counter to unscrew with one hand.

I love the mini chopper too, kicker. Hate the huge, dangerous food prep machines! Also use it for ice (sno cones, drinks), herbs, ham salad.
Hope to put my Pampered Chef apple peeler/corer to use soon. I have an apple tree. Also love my Sunbeam stand mixer. Even before I had problems with arm/hand strength, that was a life saver at the holidays. Now, I'd never make treats if not for that thing. I learned to make bread with it, and that makes a yummy pizza crust. Oh, and a deep freezer. Stock up for when I just can't get out to shop.

I am crazy about vegetables.
Zucchini is easy to cut. I slice it about 1" thick rounds and put them in the Ziploc Zip 'n Steam bags. The outside of each bag tells how long to steam. Takes no more than a minute. Zucchini comes out PERFECT. We tried it with green beans with the same results. I swear on this product. Your chef can tell what seasonings go with it. You will find the Zip 'n Steams in the baggie section of grocery store. |

The birds eye veggie steamers are very good. You just put the whole bag in the microwave and the veggies steam and keep crisp. There is a wide variety of kinds. I don't have ms but standing for long period is hard so anything that can be made in the microwave I love. So I guess microwave recipes. My mom jokes how I can make anything in a microwave. That is a nice idea about the cookbook
