Default Mint Jelly

Does any-one make their own mint jelly?

I make mint sauce with fresh mint, vinegar and sugar but that's rather thin. What I'd like is to be able to make the thicker mint jelly.

Does anyone know how to make that one?

I've never made mint jelly. Made the mint sauce but not a jelly.
Most recipes I've seen for mint jelly include granny smith apples, steamed in the vinegar and the sugar first and then pureed and the mint added last. Other ones I've seen use gelatine but I don't really like using gelatine. I wonder how agar agar would work. It's not made from animals. It would probably leave the jelly nice and clear too, like in the bottles bought at the supermarket.

Thanks Lara.

I planted a herb garden (I've almost always got a herb garden where ever I live) and have plenty of fresh mint which I didn't want to see wasted. Like you I make the thin version, but thought the jelly would be a nice change.
