Default gluten or other food intolerance

I have recently been on an allergy elimination diet. My diet consisted of mainly antibiotic-free chicken or fish, rice-based foods, veggies of course, and fruits.

Does a food intolerance OFTEN cause stomach issues? Does gluten cause stomach issues most of the time?

After 3 weeks on the diet I felt no difference from any symptoms. After no gluten for 4 weeks, no change. Then I cheated and ate a few meals out, have just eaten pizza tonight. My symptoms did not change YET and my stomach has not gotten upset once.

My normal symptoms before this diet may include slight constipation but does not include the opposite. A couple of years ago however, I did have a lot of the other or "IBS" as the doctors called it. I started having morning breakfast shakes and added flax seed. I also used glutamine. Since then, my stomach rarely goes back to the IBS symptoms, hardly ever. I do get acid reflux at night, but this is common with MCTD/autoimmune. I have been told I probably have systemic yeast (by nutrition store owner and hormone/natural doctor). And that I probably have leaky gut. When I used the glutamine it was to help that. But I don't feel like I have these symptoms of leaky gut anymore.

So does it sound like gluten could be a culprit here, or would I have noticed a big change by now? I did test negative for celiac at one point.

One more thing, I did stop drinking milk back at the same time I tried to heal my stomach. I started drinking almond milk. But I never quit anything else - like cheese or butter. I have noticed in the past a bad stomach right after eating ice cream. Maybe I have a problem with something in the milk or cream but not affecting me in the cheese or butter? Could make sense that my quitting milk has already helped me with the food issues.

I think you may have multiple food intolerances. A month after going gluten free I felt glutened, but I could not find the source. Finally figured out it was a response to soy. Via an elimination diet I found I also developed problems with dairy, eggs, corn and rice. I know the symptoms well enough now to understand when I have eaten an offending food.

The only answer in my mind is eating a very limited diet and reintroducing suspect foods every 3 days or so. You need to be suspicious of gluten, soy, eggs, dairy, peanuts, beans and nightshade vegetables.
