Default Anyone here living in Norway?? (to help a young lady there)

Hi All!

I've heard back from a young lady living in Norway, who has Celiac Disease, and who needs some practical & friendly support/advice from other gluten-sensitive folks in Norway. She has a form of very mild autism, in addition to gluten sensitivity, but she is very intelligent and is willing to try whatever it takes to feel better. I've already given her lots of advice, which has helped some (helped her conquer her VCD/vocal cord dysfunction), but...

She wrote the following to me, yesterday. She first contacted me back in May of 2007.

"I eat corn but its not good for me, sometimes i get very tired and sad. Sometimes i get very hyperactive and unfocused. So i will stop eating it, but it's very difficult to eat corn free when I am eating glutenfree. Nearly all glutenfree products contain corn here in Norway."
She also wrote:

"You said i should stop eating gluten, casein, egg, soy and corn. So I did and after 2 month i tried to eat egg and soy. This protein dosen´t give me reflux but i do not have enough enzym to ”break them down”. So when i was eating egg i got problem to talk, i was angry. Its the same with soy and casein."

I will give her more advice, but I think what would help her a lot, would be a friendly person in Norway, who has been there, done that, regarding gluten & other protein sensitivities, to help her with finding safer products, cooking more from scratch, etc.
