Default Easy GF peanut butter cookies

someone posted this link on a parenting board I am on, it's not a GF board, but lookie here...

1 C. Peanut butter
1 C. Sugar
1 Large Egg

Mix all together then spoon them onto cookie sheet, using a fork smash them just a bit leaving fork marks. Bake at 350 until done.

Also she added a variation:
PB & J Cookies

Make above cookies, except don't smash w/fork. Make a little indent w/a pop top from a water bottle or other object, then fill with jelly/jam whatever and bake.
